The Crush @ Paso Robles is a fully equipped boutique custom crush facility that specializes in making relatively small amounts of wine with, and for, our clients. We work with both Custom Crush and Alternating Proprietor clients, who wish to make as little as 2-4 barrels of wine, and with clients making 250 barrels. In all cases we meet with clients do do an initial needs assessment, discuss the winemaking styles desired, and develop a budget for the client that is reasonable and adequate to make exceptional wines. We offer an "A La Carte" pricing structure as well as a "Cafeteria Plan". In all cases, we strive to meet and surpass pricing at any other Crush Facility. Unlike many other facilities, we specify charges from the initial inquiry onward.
Out Cafeteria Plans bundle services into a unique and very cost effective package. Clients who choose the Cafeteria Plan are pleased with the high level of services coupled to a very efficient reporting system. We meet periodically throughout the year to assure that we are indeed meeting all client's wine making needs.
We are capable of performing all standard winemaking activities. These include, but are not limited to sorting fruit, detemming and crushing, and ultimately pressing the must obtained. During the fermentation process, we work with our clients to assure that the characteristics of the wine being made are true to the varietal ,and meet our client's expectations and wine producing vision.
The Crush @ Paso Robles also maintains a laboratory that is capable of performing standard analyzes as they relate to the winemaking process.
Our relatively small size allows us to work individually with clients, and to perform all tasks winemaking tasks that are agreed upon. We monitor the client's wines as if they were our own, and treat them the same way. Our sanitation practices are second to none.
